Ingredients
- Celery salt - 7.1 oz
- Mayonnaise - 2.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Mustard Greens - 1 tablespoon
- Cornichons - 3 pieces
- Capers - 3 teaspoons
- Anchovies - 3 pieces
- Cilantro - 1.8 oz
- Olive Oil - 3 tablespoons
- Salted pork belly - 7.1 oz
- Meyer Lemon Juice - 3 tablespoons
Step by Step guide
Step 1
Peel the celery root, cut it into 4 pieces, then slice it thinly, and then into fine strips.
Step 2
Place mayonnaise on a plate, season with salt and pepper, and add mustard.
Step 3
Chop 2–3 cornichons, 2–3 teaspoons of capers, and 2–3 anchovies.
Step 4
Add olive oil and lemon juice.
Step 5
Chop the cilantro (traditionally parsley should be used) and add it to the mixture.
Step 6
Add the celery and mash the mixture well with a spoon to release the juices.
Step 7
Plate using a ring mold, placing the cured meat around the edges.
