Quick Solyanka
Ingredients
- Potato - 1 piece
- Carrot - 1 piece
- Onion - 1 head
- Pickled Cauliflower - 4 pieces
- Spiced Tomato Juice - 1 qt
- Sausages - 2 pieces
- Spices - to taste
- Semi-Smoked Sausage - to taste
- Herbs - to taste
- Minced garlic - to taste
Step by Step guide
Step 1
Peel all the vegetables.
Step 2
In a pot (approximately 3 liters), add diced potatoes, sliced sausages, and finely chopped cold cuts — smoked meats (anything you have in the fridge: cooked sausage, raw sausage, carbonade, etc.). It all depends on your imagination and the ingredients available in your refrigerator.
Step 3
Grate the pickles on a coarse grater directly into the pot.
Step 4
Pour in the tomato juice and let it simmer.
Step 5
In a frying pan, add grated carrots, finely chopped onions, and sauté in vegetable oil. Add finely chopped herbs and continue to sauté for another 3-4 minutes.
Step 6
As soon as the potatoes are cooked (approximately 10–12 minutes), add boiling water to fill the pot, then stir in the sautéed onions, carrots, and herbs.
Step 7
Bring to a boil, add finely chopped garlic and spices. Season with salt to taste. Let it simmer for another 5–6 minutes.
Step 8
Serve with a wedge of lemon, olives, and sour cream.
