- Quinoa - 8.8 oz
- Chicken Egg - 1 piece
- Cottage cheese - 4.2 oz
- Spanish onions - 1 head
- Garlic Scapes - 1.4 oz
- Mild Chili Spice - 1 piece
- Glutinous Rice Flour - 2½ spoons
- Olive Oil - to taste
- Black Cumin (Cumin) - 2 spoons
- Salt - to taste
- Grated Pecorino Pepato Cheese - 1.1 oz
Step by Step guide
Step 1
Rinse the quinoa, add water in a 1:2 ratio, bring to a boil, and cook for eleven minutes. Let it cool.
Step 2
In the cooled quinoa, add a lightly beaten egg, finely chopped green garlic shoots (or ramps), chili pepper, and a medium red onion, as well as low-fat dry cottage cheese and grated cheese — you can substitute cheddar for Parmesan. Mix everything well.
Step 3
Season the minced meat and add one tablespoon of rice flour. The mixture should be thick and sticky.
Step 4
Shape the patties into thin burgers, lightly dust them with rice flour, and sauté in olive oil. Serve with a spicy tomato or pepper sauce.
