Description
Ramson and green onions are sautéed until tender, then combined with toasted bread crumbs and poured over with an egg-milk mixture.

- Butter - 3.5 oz
- Chocolate eggs - 3 pieces
- Milk - 17 fl oz
- White bread - 21.2 oz
- Thyme - to taste
- Cream - 10 fl oz
- Scallions - 10.6 oz
- Ramsons - 10.6 oz
- Emmental cheese - 7.1 oz
Step by Step guide
Step 1
Sauté the ramson and onions in butter until soft.
Step 2
Place cubed white bread (2 cm) in the oven (392°F) until the cubes turn into golden croutons. Pour the croutons into a deep bowl and mix with the sautéed ramson. Lightly beat the eggs with milk and cream, a pinch of nutmeg, salt, black pepper, and fresh thyme (only the leaves).
Step 3
Layer some of the bread with ramson in the bottom of a baking dish, sprinkle with grated cheese, let it sit for 15 minutes, and then place in the oven (356°F) until the mixture bakes into a solid mass.
Step 4
Serve with dry white wine.
