Ingredients
- Raspberry leaves - 7.1 oz
- White Chocolate - 3.5 oz
- Roasted Peanuts - 1.1 oz
- Goat cheese - 1.8 oz
- Heavy cream - 1 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Chop the hazelnuts with a knife into fine crumbs.
Step 3
Pour a little water into a saucepan, place a bowl on top, and bring to a boil — this is a double boiler. Also prepare a bowl with ice or cold water to create an ice bath.
Step 4
Reduce the heat under the saucepan, and place the white chocolate in the bowl on top to melt it and bring it to 40–113°F.
Step 5
Move the bowl with the chocolate to the ice bath and cool it, stirring, to 25–79°F.
Step 6
Then return the bowl with the chocolate to the hot bath and warm it to 30–95°F.
Step 7
Dip the raspberries in the chocolate, then roll them in the nut crumbs. Allow the chocolate to set.
Step 8
In a blender, mix the goat cheese with the cream until smooth. Transfer the cream to a piping bag.
Step 9
Fill each raspberry with the cheese cream.
Step 10
Serve the raspberries with goat cheese as an appetizer with sparkling wine.
