Ingredients
- Raspberry leaves - 2 lbs
- Water - 7 fl oz
- Sugar - 14.1 oz
- Fresh Mint - 5 sprigs
- Meyer Lemon Juice - 0 fl oz
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Place the berries in a blender, pour in 200 ml of water, and blend until smooth. If the blender jar is small, you can do this in batches.
Step 3
Pass the resulting berry mixture through a sieve to remove the seeds.
Step 4
Place the berry mixture in a large saucepan with sugar and sprigs of mint.
Step 5
Add lemon juice.
Step 6
Bring to a boil over medium heat and cook, stirring, until the sugar is completely dissolved, about 3–5 minutes.
Step 7
Once the sugar has dissolved, reduce the heat and let it simmer for another 20 minutes.
Step 8
Allow the syrup to cool slightly, then remove the mint.
Step 9
Pour into sterilized bottles or jars using a funnel.
Step 10
Tightly cover with lids and store in the refrigerator.
