Description
This dish may appeal to many, even if you are not a raw vegan or vegetarian. A big plus of this soup is that it doesn't need to be cooked. The borscht turns out even tastier and more aromatic than the traditional version. And while preparing it, you will preserve the vitamins of the vegetables that are lost during cooking.
Ingredients
- Water - 1 qt
- Beetroot - 1 piece
- Potato - 1 piece
- Carrot - 1 piece
- Onion - ¼ head
- Potato - 2 pieces
- Orange Bell Peppers - ½ piece
- Garlic - 2 cloves
- Olive Oil - 1 fl oz
- Ground Black Pepper - to taste
- Parsley - 1.1 oz
- Scallions - 1.1 oz
- Ocean salt - to taste
- Spices - to taste
Step by Step guide
Step 1
Peel the vegetables. Grate the carrot and beetroot. Slice the potato thinly. Finely chop the onion, bell pepper, tomato, and garlic. Combine all the vegetables and drizzle with olive oil.
Step 2
Boil water in a pot where you will prepare the borscht. Turn off the heat, and add all the prepared vegetables to the pot with water. Season with salt, pepper, and your favorite spices. Cover with a lid and let it steep for 15–20 minutes. The borscht is ready!
Step 3
Before serving, sprinkle with finely chopped fresh herbs.
