Red Bean and Mushroom Pâté
Ingredients
- White Beans - 10.6 oz
- Vegetable Oil - 6 tablespoons
- Meyer Lemon Juice - 1 tablespoon
- Onion - 1 head
- Pickled Chanterelles - 7.1 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Soak the beans for 6 hours. Then rinse and change the water.
Step 2
Cook on low heat for 2 hours.
Step 3
Strain, but do not discard the water from the beans.
Step 4
Chop the onion.
Step 5
Sauté the onion until golden. Be careful not to overcook it, or it will taste bitter.
Step 6
Clean the mushrooms and slice them.
Step 7
Sauté the mushrooms for 6–10 minutes.
Step 8
Mash the beans, adding the mushrooms and onion. It should form a creamy mixture. For a smoother consistency, add the water used to cook the beans.
Step 9
Add lemon juice to the pâté.
Step 10
Season with salt and pepper to taste. Mix until smooth and chill.
