Red Lentil and Carrot Soup
Ingredients
- Lentils - 12 oz
- Water - 7 glasses
- Onion - 1 head
- Garlic - 3 cloves
- Ground coriander - 1 tablespoon
- Ground Cumin - 1 tablespoon
- Turmeric - ¼ spoons
- Carrot - 10.6 oz
- Ground coriander - 0.7 oz
- Orange Bell Peppers - 1 piece
- Scallions - 0.7 oz
- Cayenne Pepper - to taste
Step by Step guide
Step 1
In a deep skillet, add the lentils and cover them with water. Bring to a boil and skim off any foam.
Step 2
Then add the finely chopped onion, minced garlic, ground coriander, cumin, and turmeric. Partially cover with a lid and cook for 15 minutes.
Step 3
Add thinly sliced or grated carrot and finely chopped red bell pepper, and cook for another 10 minutes until the vegetables are tender.
Step 4
Add finely chopped cilantro and green onions. Season with salt, pepper, and cayenne pepper.
Step 5
Serve garnished with coriander sprigs.
