- Lentils - 1 cup
- Water - 2 cups
- Onion - 1 piece
- Tomatoes - 3 pieces
- Turmeric - 1 teaspoon
- Olive Oil - 1 teaspoon
- Natural Yogurt - 7 fl oz
- Scallions - 0.7 oz
- Ground Black Pepper - to taste
- Salt - to taste
Step by Step guide
Step 1
Rinse the lentils well, cover with two cups of water, bring to a boil, then reduce the heat and let it simmer.
Step 2
Dice the onion and add it to the lentils.
Step 3
Peel and chop the tomatoes, then add them to the pot with the lentils (to peel the tomatoes, briefly hold them in boiling water, then transfer to cold water).
Step 4
Once the lentils are cooked, add the turmeric. Stir and let it cook for a couple more minutes.
Step 5
At the very end, add the yogurt, stir, and turn off the heat. Add a spoonful of oil, salt, and pepper to taste.
Step 6
Serve the soup with fresh green onions, cilantro, or other herbs.
