Red Risotto with Swiss Chard
Ingredients
- Olive Oil - 2 tablespoons
- Chicken Broth - 5 cups
- Onion - 1 head
- Arborio rice - 1½ cups
- Swiss chard leaves - 2 stalks
- Dry White Wine - ½ cup
- Grated Pecorino Pepato Cheese - 2.1 oz
Step by Step guide
Step 1
In a small pot, bring the broth to a boil, reduce the heat, cover, and keep warm.
Step 2
Heat the olive oil over medium heat in a skillet and add the finely chopped onion. Sauté until soft, about 5 minutes. Then add the rice and finely shredded Swiss chard, and stir for about 3 minutes.
Step 3
Pour in the wine and cook until it evaporates completely, about 2 minutes.
Step 4
Add 4.5 cups of hot broth, stir, and cook, stirring, until all the broth is absorbed. Add more broth and cook for about 20 minutes, until the rice is tender.
Step 5
Stir in the Parmesan cheese. Season with salt and pepper. Transfer to a serving bowl and sprinkle with Parmesan on top.
