- Rice Noodles - 7.1 oz
- Shrimp - 9 pieces
- Mussels - 10.6 oz
- Garlic - 2 cloves
- Soy Sauce - 2 fl oz
- Meyer Lemon Juice - to taste
Step by Step guide
Step 1
Soak the rice noodles in room temperature water for 15 minutes, then hold them in boiling water for 30 seconds.
Step 2
Cook the shrimp and mussels in salted water, let them cool, drizzling with lemon juice.
Step 3
Sauté the garlic cloves in a little olive oil until fragrant, then add the soy sauce, noodles, and seafood (the shrimp can be left unpeeled) and drizzle with lemon juice.
Step 4
Stir-fry for just 1–2 minutes, mixing thoroughly.
