It is preferable to use large rice - Superfino.
Ingredients
- Nerone Rice - 6.2 oz
- Sugar - 5.3 oz
- Milk - 1 qt
- Avocado - 5 pieces
- Vanilla Pod - 1 piece
- Cream (40%) - 3 tablespoons
- Meyer Lemon Juice - to taste
Step by Step guide
Step 1
Pour the rice into a pot, cover with cold water, and bring to a boil. Reduce the heat and simmer for 5 minutes. Transfer the rice to a conical strainer, place it in the pot, add sugar, milk, and the vanilla pod, split lengthwise, and simmer over moderate heat for 17-20 minutes. If the rice is cooked but not all the liquid has been absorbed, remove the rice and reduce the liquid until it thickens to a sauce consistency. If the rice is undercooked, add a little more liquid.
Step 2
Combine the rice with the remaining liquid, transfer to a separate covered container, cool to room temperature, then chill in the refrigerator. Meanwhile, peel the avocado, remove the pit, chop in a food processor, and strain through a fine sieve. Add a little lemon juice to preserve the color (and taste) of the avocado. Mix with the chilled rice. Before serving, add whipped cream.
