Rice with Fried Vegetables and Mushrooms
Ingredients
- Vegetable Oil - 3 tablespoons
- Sweet Potato - 1 piece
- Green onion tops - 1 bunch
- Orange Bell Peppers - 1 piece
- Courgette - 1 piece
- Turnips - 2 pieces
- Basmati rice - 1½ cups
- Peanut Sprouts - 2.5 oz
- Fresh Mushrooms - 3.5 oz
- Honey - 2½ tablespoons
- Soy Sauce - ¼ cup
Step by Step guide
Step 1
Cook the rice in boiling water until ready. Drain.
Step 2
Heat the vegetable oil in a wok or large skillet over medium heat. Add the chopped green onion bulbs, thinly sliced sweet potato, sliced green bell pepper, and thinly sliced carrots and zucchini. Sauté for a while until softened.
Step 3
Then add the rice, sprouts, sliced mushrooms, and chopped green onions. Cook for a while, stirring, until all ingredients are heated through, adding more oil if necessary.
Step 4
Mix the honey and soy sauce, pour over the rice with vegetables, and stir well. Serve immediately.
