Description
Rice with Ginger and Pineapple
Ingredients
- Basmati rice - 2 cups
- Grapeseed Oil - 3 tablespoons
- Grated Ginger Root - 3 tablespoons
- Coarse Salt - ½ teaspoon
- Green onion tops - 5 pieces
- Pineapple - 4.2 oz
- Black sesame seeds - 1 teaspoon
Step by Step guide
Step 1
Rinse the rice well under cold running water and transfer it to a pot. Add water so that it covers the rice by 2 fingers. Bring to a boil, reduce the heat, cover with a lid, and cook for 15–20 minutes until done. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork and let cool.
Step 2
Heat 1 tablespoon of oil in a skillet over medium heat until it starts to smoke. Add the ginger, finely chopped white and light green parts of the green onions (leave the dark green parts aside), and salt. Sauté for 1 minute.
Step 3
Add the remaining oil and add the rice. Sauté until golden, stirring, for 10–12 minutes.
Step 4
Remove from heat and add the remaining green onions, finely chopped pineapple, and sesame oil. Mix and season with salt to taste.
