Description
An unusual side dish of rice with the aroma of lemon and mint. This dish is so delicious and filling that it can successfully be served as a standalone meal.
Ingredients
- Olive Oil - 2 tablespoons
- Chicken Broth - 17 fl oz
- Lemon - 1 piece
- Salt - 1 teaspoon
- Ground Black Pepper - to taste
- Scallions - 1.4 oz
- Peppermint leaves - 1 bunch
- Rice - 1 cup
Step by Step guide
Step 1
Heat the oil in a pot over medium heat. Add finely chopped mint and green onion and sauté the herbs, stirring constantly, for about one minute.
Step 2
Add the rice to the pot and continue to sauté for another one and a half to two minutes, mixing the rice and herbs until all the rice grains are coated with oil. Add the chicken broth and bring it to a boil over medium heat. Season with salt and pepper to taste.
Step 3
Zest half of the lemon and add it to the pot with the rice; squeeze the lemon and mix the lemon juice with the contents of the pot.
Step 4
When the broth comes to a boil, reduce the heat and cover the pot with a lid. Cook the rice for 18-20 minutes, until the rice is tender and has absorbed all the water. Remove the pot from the heat and let the rice sit for another 5-10 minutes.
Step 5
Transfer the rice to a deep dish, garnish with mint sprigs and lemon wedges, and serve.
