Description

To make the coffee stronger, consider the roast level of the beans. If the roast is light/medium, it's better to use 4 teaspoons; if dark, use 2.5–3. The ideal blend for this recipe is a classic mix of Arabica (70%) and Robusta (30%). You can enhance the spice mix with whole or ground ginger, cloves, star anise, vanilla, or even chili pepper.

Ingredients

  • Medium ground coffee - 3 teaspoons
  • Ground Cinnamon - 0.3 teaspoons
  • Cocoa Powder - ½ teaspoon
  • Raw cane sugar - to taste
  • Salt - a pinch
  • Cardamom - 3 pieces
  • Water - 4 fl oz

Step by Step guide

Step 1

First, heat the cezve, add a little sugar, and lightly toast it.

Step 2

Add freshly ground coffee (medium or fine grind), crushed cardamom pod, cinnamon, cocoa, and a pinch of salt into the cezve, pour in soft water, and stir (just once!).

Step 3

Over low heat, bring the coffee to just before boiling a couple of times (usually, it takes about 5–7 minutes for the foamy bubbles to form, but it's best to keep an eye on it to prevent boiling), remove from heat and let it steep for a couple of minutes.

Step 4

Pour the steeped coffee into a hot coffee cup (through a fine sieve).
