Description
Milanese risotto is in our 'Golden Thousand'! It's the simplest and most delicious dish. You just need to choose a good Parmesan and some dry white wine. And don't forget about the saffron.
Ingredients
- Arborio rice - 20 oz
- Butter - 5 oz
- Saffron - 0 oz
- Onion - 5 oz
- Dry White Wine - 5 fl oz
- Chicken Broth - 1½ l
- Grated Pecorino Pepato Cheese - 5 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Chop the onion.
Step 3
Melt 60 g of butter in a skillet.
Step 4
Add the finely chopped onion and sauté it over low heat until it softens.
Step 5
Add the rice and cook for 1-2 minutes.
Step 6
Then pour in the wine.
Step 7
Add ground saffron.
Step 8
Add salt.
Step 9
Increase the heat and simmer, stirring, until the liquid is absorbed.
Step 10
Add a ladle of hot broth, stir, and allow the rice to absorb the moisture without drying out. Gradually add more broth while constantly stirring, making sure the rice does not stick to the bottom.
Step 11
When the rice is ready, remove it from the heat, stir in the remaining butter and grated Parmesan cheese.
Step 12
Serve garnished with freshly ground pepper and Parmesan cheese.
