Risotto with Vodka and Onion
Ingredients
- Rice - 8.8 oz
- Olive Oil - 3 tablespoons
- Scallions - 2.1 oz
- Vodka - 6 tablespoons
- Chicken Broth - 1 qt
- Lemon - 1 piece
- Chives - 3.5 oz
- Parmesan Cheese - 3.5 oz
- Parma Ham - to taste
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a heavy-bottomed pot, heat the olive oil over medium heat. Chop the green onion and add it to the pot. Then add the rice and sauté for 2 minutes, stirring constantly.
Step 2
After 2 minutes, add 6 tablespoons of vodka to the pot. Keep on medium or high heat, stirring continuously until all the vodka evaporates.
Step 3
In a separate pot, heat the vegetable broth over medium heat. Gradually pour the warm broth into the pot with rice in small portions, waiting for each portion to evaporate. Remember to stir the rice continuously.
Step 4
While the rice is simmering, grate the zest of one lemon into a separate bowl, squeeze the juice of half a lemon into it, and add the finely chopped chives. Mix well.
Step 5
After 20 minutes, when all the broth has been absorbed by the rice, remove the pot from the heat. Season with salt and pepper to taste, then add the lemon juice with zest and the onion mixture, and stir.
Step 6
Grate the Parmesan cheese finely. Cut the Parma ham into small pieces and lightly sauté it, then add it to the risotto and mix. Serve the risotto on plates, topped with grated Parmesan.
