Ingredients
- Butter - 3.5 oz
- Onion - 1 head
- Rice - 12.3 oz
- Chicken Broth - 1 qt
- Dry White Wine - 1 cup
- Salt - to taste
- Ground Black Pepper - to taste
- Grated Pecorino Pepato Cheese - 3.5 oz
Step by Step guide
Step 1
In a heavy-bottomed skillet with high sides, melt half of the butter.
Step 2
Finely chop the onion, add it to the melted butter, and sauté over low heat until translucent.
Step 3
Rinse the rice, dry it, add it to the skillet, mix well, and let it warm up with the onion and butter.
Step 4
Bring the broth and wine to a boil in a separate pot, then reduce the heat, keeping the pot on the stove.
Step 5
When the rice becomes translucent, pour in 0.5 cup of hot broth, allowing it to absorb completely while stirring constantly. After that, add broth until it is twice the volume of the rice. Season with salt and pepper. Increase the heat, cover with a lid, and simmer, stirring occasionally. If necessary, add hot broth gradually.
Step 6
Before serving, add the remaining butter and grated cheese, mix, and serve on plates.
