Roast Beef with Rosemary Salt
Ingredients
- Beef - 14.1 oz
- Ground Black Pepper - to taste
- Salt - 1.8 oz
- Salad Potatoes - 14.1 oz
- Vegetable Oil - 1 qt
- Mayonnaise - 6.7 oz
- Truffle Oil - 0 fl oz
- Honey - 3.5 oz
- Mustard Greens - 3.5 oz
- Rosemary - 1 sprig
Step by Step guide
Step 1
Wash the beef under running water and dry it with a towel. Rub the meat with salt and ground pepper to taste. Place it in a baking dish and let it slow-cook in the oven at 140°F for 4 hours.
Step 2
Wash and peel the potatoes, cut them into wedges, and fry them in vegetable oil until golden brown.
Step 3
Rinse the rosemary in water and dry it thoroughly with a towel. In a blender, add the salt and the rosemary leaves, removed from the stems, and blend until smooth.
Step 4
Spread the prepared rosemary salt on a baking sheet and dry it in the oven at 50-158°F.
Step 5
Mix the mayonnaise with truffle oil, and honey with mustard.
Step 6
Slice the cooked meat into thin pieces and arrange it on a plate, adding rosemary salt on top to taste. Serve with potato wedges and two types of sauce.
