  • Olive Oil - 4 teaspoons
  • Fresh basil leaves - 1 tablespoon
  • Salt - ½ teaspoon
  • Grated Lemon Zest - 1 teaspoon
  • Ground Black Pepper - ¼ teaspoon
  • Meyer Lemon Juice - 1 tablespoon

Step by Step guide

Step 1

Preheat the oven to 446°F.

Step 2

Peel the beets and cut them into small segments.

Step 3

In a large bowl, mix the olive oil, oregano, marjoram, lemon zest, salt, and pepper. Add the beets and toss well.

Step 4

Spread on a baking sheet in a single layer and bake in the oven for 20–25 minutes until tender and golden brown.
