- Olive Oil - 1 tablespoon
- Brussels Sprouts - 2 lbs
- Salt - to taste
- Ground Black Pepper - to taste
- Toasted Sesame - ¼ cup
- Grated Pecorino Pepato Cheese - 1.1 oz
- Olive Oil - ¼ cup
- Balsamic Vinegar - ¼ cup
- Dijon Mustard - 1 tablespoon
- Honey - 1 teaspoon
- Garlic - 1 clove
Step by Step guide
Step 1
In a small jar, combine the vinegar, extra virgin olive oil, mustard, honey, and minced garlic. Season with salt and pepper, close the lid, and shake well.
Step 2
Trim the Brussels sprouts and cut each sprout in half. Place them in a bowl and add olive oil, salt, and pepper.
Step 3
Preheat the oven to 392°F.

Spread the Brussels sprouts on a baking sheet and roast for about 30 minutes, until they start to caramelize, shaking the baking sheet a few times.
Step 5
Transfer the Brussels sprouts to a bowl and toss with ¼ cup of balsamic vinaigrette and pine nuts. Sprinkle with cheese and serve.
