Roasted Tomatoes with Garlic and Olive Oil

Ingredients

  • Yellow Cherry Tomatoes - 4 lbs
  • Garlic - 6 cloves
  • Olive Oil - 5 tablespoons
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Preheat the oven to 203°F.

Step 2

Cut the tomatoes in half and place them cut side down on 2 large baking sheets.

Step 3

In a small bowl, mix the minced garlic and olive oil and drizzle over the tomatoes.

Step 4

Season the tomatoes with salt and pepper and place them in the oven for 6-8 hours (the tomatoes should shrink in size but maintain their shape). Let cool.
