Ingredients
- Onion - 1.4 oz
- Herring - 14.1 oz
- Apple - 2.8 oz
- Passata Tomato Sauce - 1.4 oz
- Sugar - 0.7 oz
- Vinegar essence - 2 fl oz
- Vegetable Oil - 0 fl oz
- Bay leaf - 2 pieces
- Green peppercorns - to taste
- Cinnamon - to taste
- Ground clove - to taste
- Water - 2 fl oz
- Sour Cream - 2.8 oz
Step by Step guide
Step 1
Grate the peeled apples and onion on a coarse grater, add the tomato paste and sugar. Mix everything and spread this mixture on lightly beaten pieces of herring.
Step 2
Roll the fillets into tubes, place them in a porcelain or glass dish, add sliced apples, and pour over the marinade made from water, vinegar, vegetable oil, spices, sugar, and tomato paste.
Step 3
After 1–2 days, remove the rollmops from the marinade, place them in a salad bowl, pour over sour cream, and serve garnished with the apple slices removed from the marinade.
