Description
Tender parts of artichokes are simmered for an hour in a sauce made of olive oil, parsley, mint, and garlic. The perfect hot or cold appetizer.
Ingredients
- Artichoke bottoms - 8 pieces
- Lemon - 1 piece
- Garlic - 2 cloves
- Parsley - 1 bunch
- Fresh Mint - to taste
- Salt - to taste
- Ground Black Pepper - to taste
- Olive Oil - 4 fl oz
Step by Step guide
Step 1
Clean the artichokes by removing the outer leaves, leaving only the whitest and most tender parts in the center. Cut the stem to 5 cm from the bottom.
Step 2
Submerge the artichokes in cold water with added lemon to prevent them from browning.
Step 3
Finely chop the parsley and mint. Mince the garlic. Add olive oil. Sprinkle with salt and pepper and mix.
Step 4
Open the leaves of the artichokes, remove the heart, and pour 3/4 of the sauce inside. Carefully close the leaves back. Place the prepared artichokes head down in a deep skillet so they do not tip over while cooking.
Step 5
Pour in the sauce and fill the remaining space in the skillet with water. Cover and cook over medium heat for about 1 hour (until the water evaporates).
Step 6
Artichokes can be served either cold or hot.
