Ingredients
- Salted pork belly - 2 lbs
- Salt - 14.1 oz
- Bay leaf - 5 pieces
- Green peppercorns - 10 pieces
- Garlic - 10 cloves
- Mild Chili Spice - to taste
Step by Step guide
Step 1
Make incisions in the lard with a knife, and stuff it with salt and sliced garlic cloves (use eight cloves).
Step 2
Cut the lard into cubes, place them in a container, sprinkle the lard with salt, add a bay leaf, whole peppercorns, and a bit more garlic. Weigh it down and let it sit in a warm place for 3–4 days, then transfer it to the refrigerator for 10 days.
Step 3
Remove it and rinse thoroughly.
Step 4
Rub the lard with ground chili pepper.
