Description
If you have the luxury of access to a traditional wood-fired oven, simply combine all the ingredients in a large pot, add water, and leave it in the heated oven overnight.
Ingredients
- Poultry - 28.2 oz
- Potato - 5 pieces
- Pearl barley - ½ glasses
- Onion - 2 pieces
- Carrot - 2 pieces
- Pickled Cauliflower - 3 pieces
- Salt - 1 tablespoon
- Sugar - 1 tablespoon
- Wheat Flour - 2 spoons
- Garlic - 4 cloves
- Dried Dill Stems - 1 tablespoon
- Dried parsnip - 1 tablespoon
- Sauerkraut - 3.5 oz
- Cucumber Brine - 1 glass
Step by Step guide
Step 1
Soak the pearl barley overnight. Alternatively, you can pour boiling water over it for a quicker method, which will take about two hours.
Step 2
In a large five-liter pot (for a big family), boil the chicken cut into large pieces (for about 40 minutes). Keep the heat slightly above medium. Let it simmer. Avoid a vigorous boil.
Step 3
While the chicken is simmering, sauté the chopped onion in a skillet until it becomes translucent (about 10 minutes, stirring occasionally). Add the grated carrot and sauerkraut to the onion. Cover with a lid and stew everything together for about 30 minutes, stirring occasionally, over low heat.
Step 4
When the cabbage becomes soft, uncover the pot, increase the heat, and add the flour. Stir well and wait for 3-4 minutes. The skillet will fill with the aroma of cabbage pies. Just what you need.
Step 5
Add the chopped pickles and pour in a cup of cucumber brine. Let it simmer covered for 5 minutes.
Step 6
Remove the chicken from the pot and place it on a plate to cool. Tear it into pieces. The bones and cartilage are not needed in the soup, so feel free to dispose of them as you see fit.
Step 7
Add the chopped potatoes and pearl barley to the broth. Cook for about 30 minutes. Taste to check; the pearl barley should be soft.
Step 8
Add the contents of our pan with vegetables to the pot. Simmer on low heat for 5 minutes.
Step 9
Turn off the heat, add salt, sugar, crushed garlic, parsley, dill, and chicken meat. Stir well.
Step 10
Add sour cream and pepper to taste to the bowl of soup.
