Ingredients
- Salad Potatoes - 2 lbs
- Garlic - 2 heads
- Butter - 2.1 oz
- Milk - 1 cup
- Salt - to taste
- Ground Black Pepper - to taste
- Chopped Sage Leaves - ¼ cup
- Chili Flakes - to taste
- Grated Pecorino Pepato Cheese - to taste

Step 1
Preheat the oven to 356°F. Place the heads of garlic on a baking sheet, lightly drizzle with olive oil, and bake for 20-25 minutes until the cloves are soft. Transfer to a bowl and pour the remaining olive oil over them. Leave in the refrigerator overnight.
Step 2
Peel the potatoes, cut them into small pieces, and boil in salted water until soft, about 15-20 minutes. Drain and mash or pass through a sieve until smooth.
Step 3
Add the garlic pulp, butter, garlic-infused olive oil, and milk. Season with salt and pepper. Stir in the chopped parsley, Parmesan, and red pepper flakes if desired. Mix well.
