- Young Spinach "Belaya Dacha" - 8.5 oz
- Polenta - 5.6 oz
- Wheat Flour - 3 tablespoons
- Garlic - 2 cloves
- Butter - 1.4 oz
- Chicken Broth - 2 qt
- Flaky sea salt - to taste
Step by Step guide
Step 1
Bring the broth to a boil and cover it to keep warm. In a large heavy-bottomed pot, mix the polenta with the flour, pour in a cup of hot broth, stir, place the pot over medium-high heat, and whisk the contents until smooth and homogenous.
Step 2
Stir in the butter, add the crushed garlic cloves, and season gently with salt. Gradually pour in the remaining broth, one cup at a time, stirring, and cook the soup over medium heat for twenty-five minutes until it reaches a creamy consistency and the polenta is almost cooked.
Step 3
Add handfuls of spinach leaves to the soup and let them cook for five to seven minutes. Remove from heat, season the soup with salt and pepper, and serve immediately.
