Ingredients
- Olive Oil - 2 tablespoons
- Leek - 2 pieces
- Onion - ½ head
- Tomatoes - 2 pieces
- Bay leaf - 1 piece
- Garlic - 2 cloves
- Monkfish tail - 8.8 oz
- Shrimp - 17.6 oz
- Saffron - a pinch
- Udon Noodles - 4.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice the leeks into thin rings. Finely chop the onion. Peel the tomatoes and chop them as well. Crush the garlic with the flat side of a knife.
Step 2
Heat the olive oil in a large pot. Add the leeks and onion and cook over low heat, stirring, for 5 minutes until the onion is soft. Stir in the tomatoes, add the bay leaf, garlic, and 2 liters of water. Season with salt, add the unpeeled shrimp and fish tail. Bring to a boil, then simmer for 15 minutes, then remove the pot from the heat and strain the broth through a sieve into a clean pot.
Step 3
Remove all bones from the fish tail. Clean the shrimp, but do not discard the heads. Place the heads in a mortar and crush them with a pestle, then add the liquid that appears to the broth.
Step 4
Put the fish tail and shrimp in a blender, add a bit of broth, and blend until you have a smooth paste. Strain this mixture through a fine sieve into the broth, pressing down with a spoon to extract as much liquid as possible.
Step 5
In the mortar, crush the saffron with two tablespoons of soup, then add it all to the main pot.
Step 6
Reheat the soup over low heat. Add the noodles and cook for 15–20 minutes. Season with salt and pepper and serve immediately.
