- Eggplants - 1 piece
- Country Bread - 1 piece
- Garlic - 1 clove
- Goat cheese - 3.5 oz
- Pistachios - 0.4 oz
- Arugula - 0.4 oz
- Thyme - 0.1 oz
- Cilantro - 0.1 oz
- Vegetable Oil - 2 fl oz
- Olive Oil - 0 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Cut the eggplant into small sticks about 1.5 cm thick, heat a skillet with vegetable oil, and sauté the eggplants with thyme and garlic (you can crush the garlic clove with a knife beforehand for more aroma) until a light golden crust forms. Season the eggplants with salt and pepper to taste.
Step 2
Lightly toast a slice of rustic bread on both sides in a dry skillet, then top it with the sautéed eggplant and pieces of goat cheese.
Step 3
Garnish with cilantro and arugula leaves, sprinkle with pine nuts, and drizzle the finished salad with olive oil.
