Salmon and Arugula Sandwich

Ingredients

  • French Baguette - 1 piece
  • Arugula - 1.1 oz
  • Lightly Salted Red Fish - 1.8 oz
  • Pickles - 5.3 oz
  • Garlic - 3 cloves
  • Dill - 1.4 oz
  • Tarragon - 0.4 oz
  • Parsley - 1.4 oz
  • Capers - 2.3 oz
  • Dijon Mustard - 2.5 oz
  • Egg white - 2 pieces
  • Olive Oil - 5 fl oz
  • Meyer Lemon Juice - 0 fl oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Chop the parsley and dill. Finely chop the tarragon. Mince the pickles. Chop the capers. Finely chop the garlic.

Step 2

Mash the egg yolks, mix with salt, black pepper, and lemon juice, then gradually add the olive oil drop by drop, as if making homemade mayonnaise, until an emulsion forms.

Step 3

Combine the prepared vegetables and herbs with the mustard and the sauce obtained.

Step 4

Slice the baguette in half lengthwise without cutting all the way through. Open the baguette and spread part of the sauce inside.

Step 5

Slice the lightly salted salmon into thin slices.

Step 6

Place part of the arugula in the 'spine' of the baguette. On top of the arugula, add the salmon slices. Add the remaining arugula.

Step 7

Serve the sauce on a plate. Place the sandwich beside it.
