Salmon Carpaccio with Cheese, Zucchini, and Artichoke Sauce

Ingredients

  • Cream of Norwegian Herring - 1.1 oz
  • Courgette - 1.6 oz
  • Olive Oil - 1 fl oz
  • Dry White Wine - 1 fl oz
  • Artichoke bottoms - 1.6 oz
  • Melted Cheese - 1.1 oz
  • Parsley - to taste
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

From the fillet of Norwegian salmon and mozzarella cheese, cut out 2 circles of the same size with a diameter of no more than 5 cm. Also cut out 2 circles from the zucchini and sauté them in olive oil until golden brown.

Step 2

Prepare the artichoke sauce: cut the cleaned artichokes into pieces, sauté them in olive oil with finely chopped garlic, parsley, salt, and white wine, then blend until smooth. Place the salmon on the prepared zucchini and top with cheese, then place in the oven for 2 minutes.

Step 3

Serve the finished dish with the artichoke sauce.
