Ingredients
- Coriander essential oil - 1 teaspoon
- Vegetable Oil - 1 tablespoon
- Turmeric - a pinch
- Toasted Cumin Seeds - a pinch
- Mild Chili Spice - 2 pieces
- Shallot - 2 pieces
- Garlic - 2 cloves
- Grated Ginger Root - 2 tablespoons
- Green onion tops - 1.1 oz
- Orange zest - 1 piece
- Lime Juice - 3 tablespoons
- Coarse Salt - 1 teaspoon
- Chicken Broth - 3 cups
- Ground Black Pepper - to taste
- Smoked haddock fillet - 17.6 oz
- Spinach - 7.4 oz
- Chopped Green Onions - 2 tablespoons
- Chopped Sage Leaves - 1 tablespoon

Step by Step guide
Step 1
In a medium heat, sauté coriander and cumin in vegetable oil for one minute. Increase the heat and add turmeric, chopped chili, roughly chopped shallots, minced garlic, ginger, finely chopped green onion, lime zest, and lime juice. Sauté for 3–4 minutes.
Step 2
In a pot, bring the broth to a boil, season with salt and pepper. Add the entire mixture from the skillet to the broth and simmer for another 3–5 minutes.
Step 3
Strain the mixture through a fine sieve into a clean pot, discarding the solids, and bring the broth back to a boil over low heat.
Step 4
Add the diced salmon and cook until desired doneness, from 5 to 7 minutes.
Step 5
Add the chopped spinach and herbs. Serve immediately.
