Salmon Purée Soup
Ingredients
- Smoked haddock fillet - 12.3 oz
- Celery stalk - 1 piece
- Butter - 1.8 oz
- Spanish onions - 1 head
- Wheat Flour - 5 tablespoons
- Sliced Processed Cheese - 1.8 oz
- Milk - 1 cup
- Ocean salt - to taste
- Dill - to taste
- Croutons - to taste
Step by Step guide
Step 1
First, prepare the broth. For this, in a small saucepan, boil the celery root (1 stalk), half of the onion, and the skin from the salmon. Cook over medium heat for 20 minutes.
Step 2
In a main pot, sauté the finely chopped onion (half of the onion) and small pieces of salmon in butter until cooked. Add the flour and pour in the prepared broth. Next, add the chopped pieces of processed cheese and cook, stirring, for another 10 minutes (until the cheese is completely melted). Add 1 cup of hot milk and cook, stirring, for another 3 minutes. Add salt/pepper. *You can set aside some of the sautéed salmon to garnish the dish later.
Step 3
Blend the resulting soup in a blender. Pour into bowls, garnish with finely chopped dill, croutons, and optionally pieces of sautéed salmon. Enjoy your meal!
