Ingredients
- Spinach - 3.5 oz
- Lightly Salted Red Fish - 21.2 oz
- Chicken Egg - 1 piece
- Salt - to taste
- Cream - 1 fl oz
- Ground Black Pepper - to taste
- Meyer Lemon Juice - to taste
- Eel - to taste
Step by Step guide
Step 1
Blanch the spinach and cool it.
Step 2
Separate 200 g of lightly salted salmon and cut it into small pieces.
Step 3
To prepare the fish mousse, combine the salmon pieces, cream, egg, salt, and pepper and blend in a blender.
Step 4
Slice the remaining salmon fillet into thin slices. On each slice of fish, place a leaf of spinach, then add the fish mousse. Roll up the rolls and blanch them in steam. Drizzle the rolls with lemon juice.
Step 5
Serve with lettuce leaves.
