Ingredients
- Salt - to taste
- Udon Noodles - 5.3 oz
- Cilantro - 2 tablespoons
- Salmon - 24.7 oz
- Fish Oil - 11 fl oz
- Curry - 2 tablespoons
- Coconut Milk - 13 fl oz
- Ginger - 0.4 oz
- Mild Chili Spice - 1 piece
- Garlic - 2 cloves
- Onion - 2 heads
- Olive Oil - 1 tablespoon
Step by Step guide
Step 1
Remove seeds from the chili pepper, rinse, and finely chop with garlic and ginger.
Step 2
Slice the onion into thin rings and sauté in olive oil. Add the chili, garlic, and ginger. Season with curry paste and simmer for 2–3 minutes. Pour in the coconut milk and broth. Bring to a boil.
Step 3
Cut the salmon fillet into cubes. Add to the soup and bring to a boil. Cook for 5–7 minutes until the fish is done. Add salt and cilantro.
Step 4
Pour boiling water over the noodles and let sit for 2 minutes. Drain the noodles in a colander, place in bowls, and ladle the soup over them.
