Ingredients
- Smoked haddock fillet - 7.1 oz
- Cucumbers - ½ pieces
- Radish - 1 piece
- Strawberry - 2 pieces
- Avocado - 1½ pieces
- Garlic - 1 clove
- Shallot - 2 pieces
- Olive Oil - 2 fl oz
- Gingerbread-flavored syrup - 1 fl oz
- Meyer Lemon Juice - 1½ spoons
- Lime Juice - 2 spoons
- Soy Sauce - 4 fl oz
- Grated Ginger Root - 0.7 oz
- Mild Chili Spice - to taste
- Cilantro - to taste
- Romaine lettuce - to taste
- Lemongrass - 0.2 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Prepare the tartar sauce: finely chop ginger, a small shallot, and a clove of garlic, then mix them with lime juice and soy sauce. Cut the salmon fillet into 1 cm cubes. Finely chop lemongrass and cilantro, and combine with the fish. Dress the mixture with the sauce, place it in a ring on a plate, flatten it out, and let it sit for a while.
Step 2
Prepare the avocado mousse: blend one avocado, garlic, shallot, olive oil, simple syrup, and lemon juice in a blender until smooth. Season with salt and pepper to taste, and strain through a chinois.
Step 3
Transfer the prepared mousse to a piping bag and squeeze it onto the fish tartare in the form of droplets. Dice half of the avocado and place it on top of the mousse. Garnish with radishes, sliced cucumber, chili pepper, and strawberries. Drizzle with olive oil and sprinkle with salt.
