Ingredients
- Salmon - 10.6 oz
- Yakiniku sauce - 1.4 oz
- Salt - 0.3 oz
- Ginger - 0.4 oz
- White Pepper (whole) - 0.1 oz
- Lemon - 1 piece
- Olive Oil - 4 fl oz
- Cornichons - 0.1 oz
- Onion - 0.1 oz
- Capers - 0.1 oz
Step by Step guide
Step 1
Cut the salmon into 9 equal pieces, slicing three of them into thin slices.
Step 2
Marinate three pieces overnight in teriyaki sauce (if unavailable, regular soy sauce can be used as a substitute).
Step 3
Make a marinade from ginger by blending it with salt and pepper, the juice of half a lemon, and 80 grams of olive oil. Marinate the thin strips of salmon in the ginger marinade.
Step 4
Finely chop the remaining three pieces of salmon, add chopped cornichons, onion, capers, the juice of half a lemon, and a pinch of salt. Form three patties from the mixture, coat them in breadcrumbs, and lightly fry in a pan heated with olive oil (the recipe author does not fry them, but I prefer this option).
Step 5
Fry the salmon pieces marinated in teriyaki sauce in the remaining olive oil, then place them on a paper towel to drain excess oil.
Step 6
Arrange all three parts of the salmon on a plate. Garnish the dish with pickled ginger, sesame seeds, or a sprig of herbs.
