  • Hot smoked pink salmon - 17.6 oz
  • Coarse Salt - 6.3 oz
  • Sugar - 2.6 oz
  • Olive Oil - 0 fl oz

Step by Step guide

Step 1

Prepare all the ingredients.

Step 2

Cut the salmon into fillets, leaving the skin on.

Step 3

Use tweezers to remove all the bones from the fillet.

Step 4

Mix the salt and sugar together.

Step 5

Sprinkle the salt and sugar mixture on the flesh side of the fillet and let it sit for 8 hours.

Step 6

After 8 hours, a crust will form on the fillet; it needs to be scraped off.

Step 7

Brush the fish with olive oil and let it sit for another 8 hours.

Step 8

After 8 hours, the salted pink salmon can be served, sliced thinly, or stored in the refrigerator in a tightly sealed container. It will keep for about three weeks.
