Description
Instead of real crab, you can use its freeze-dried alternative, known as 'snow crab': it will be cheaper. However, it's not quite the same.
Ingredients
- Celery salt - 7.1 oz
- Crab Meat - 1.8 oz
- Whole egg - 2 pieces
- Sugar - ½ spoons
- Vegetable Oil - 7 fl oz
- Salt - 0.1 oz
- Vinegar essence - 1 tablespoon
- Mustard Greens - 1 tablespoon
- Meyer Lemon Juice - 1 fl oz
- Gherkins - 0.7 oz
- Capers - 0.7 oz
- Tarragon - to taste
- Green Apples - ¼ pieces
- Banana Leaves - 4 pieces
- French Baguette - 4 pieces
Step by Step guide
Step 1
For the remoulade, you'll need homemade mayonnaise: blend the egg yolks with salt, sugar, and mustard in a mixer; after a minute, while continuing to blend, gradually pour in the vegetable oil in a thin stream, followed by vinegar and a tablespoon of water.
Step 2
Add finely chopped gherkins and capers to the mayonnaise, along with chopped tarragon, pour in the lemon juice, and mix well.
Step 3
Peel half of the celery root and grate it using a medium grater. Do the same with a peeled quarter of a green apple. Cut the crab meat into large pieces. Transfer everything to a bowl, dress with remoulade, and mix well.
Step 4
Cut the baguettes into halves, then slice each half lengthwise. Spread the salad evenly on all eight pieces, then bring the halves together to form sandwiches, placing a leaf of lettuce in the middle of each.
