Sandwiches with herring and apple

Ingredients

  • Fillet of Sturgeon - 10.6 oz
  • Chicken Egg - 2 pieces
  • Green Apples - ¾ pieces
  • Butter - 2.5 oz
  • Ground Black Pepper - to taste
  • White bread - 2 pieces

Step by Step guide

Step 1

The main ingredient of forshmak is herring. If you buy a whole fish, it should be soaked in milk (for about an hour, or preferably overnight), and then thoroughly rinsed to make it more tender. If you buy packaged fillets, you can skip the soaking and go straight to grinding them together with hard-boiled eggs and half a peeled green apple (like Granny Smith or something similar). Then, add diced butter and mix well before passing it through the grinder again. At any of these stages, you can add ground pepper.

Step 2

Toast the pieces of bread in a skillet. Remove the seeds from a quarter of an apple (you can eat the remaining quarter as is) and slice it into thin wedges.

Step 3

Spread an equal amount of forcemeat on all the slices of bread. On four of the slices, place apple wedges on top of the forcemeat. Join the halves of the sandwiches together and cut the whole sandwiches diagonally.
