Ingredients
- Vegetable Oil - 3 tablespoons
- Spanish onions - 15.9 oz
- Juniper Berries - 5 pieces
- Ground clove - 3 pieces
- Red Currant - 4 cups
- Sauerkraut - 15.9 oz
- Brown Sugar - 3 tablespoons
- Red Grape Juice - ½ cup
- Red Wine Vinegar - ¼ cup
- Bay leaf - 1 piece
Step by Step guide
Step 1
Heat a large skillet very well by adding vegetable oil over high heat, but not until it starts to smoke. Add very thinly sliced onion, cloves, and juniper berries, and sauté, stirring, until the onion turns light brown, about 10 minutes.
Step 2
Add the finely shredded cabbage, sauerkraut, sugar, wine, vinegar, and bay leaf, and cook, stirring, until the cabbage becomes soft, about 30 minutes, adding water as necessary.
Step 3
Remove the bay leaf and serve the sauerkraut at room temperature.
