Ingredients
- White Cabbage - 2 lbs
- Peanut Butter - 2.5 tablespoons
- Light Raisins, Seedless - 2 tablespoons
- Coarse Salt - ¾ teaspoon
- Ground Black Pepper - ¼ teaspoon
- Butter - 3 tablespoons
- Thyme - 2 sprigs
Step by Step guide
Step 1
Place the raisins in a bowl and cover with hot water. Let sit for 30 minutes, changing the water to hot as it cools.
Step 2
Tear the cabbage into large pieces.
Step 3
Heat the peanut oil in a large skillet over medium heat and add the cabbage in batches, seasoning with salt and pepper. Cook each batch until the cabbage wilts. Add the butter and thyme, and cook, stirring, for 3 minutes.
Step 4
Drain the raisins and add them to the cabbage. Stir and place in the oven for 30-40 minutes, stirring every 10 minutes, until the cabbage is tender. Remove the thyme sprigs before serving.
Step 5
Preheat the oven to 392°F.
