Sautéed spinach with raisins, garlic, and pine nuts

Ingredients

  • Fresh basil leaves - 19.4 oz
  • Olive Oil - 4 tablespoons
  • Garlic - 6 cloves
  • Light Raisins, Seedless - 6 tablespoons
  • Pistachios - 5 tablespoons
  • Coarse Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Place the raisins in a bowl and cover with hot water. Let sit for 15 minutes, then drain and dry with a paper towel.

Step 2

Rinse the spinach well and do not dry. Place the wet leaves in a pot and set over medium heat. Cover and cook, stirring occasionally, for 3-4 minutes until the leaves wilt. Transfer to a colander and press out excess moisture with a spoon. Chop finely.

Step 3

Heat the olive oil in a wok over low heat. Add the chopped garlic, nuts, and raisins. Sauté for 3-4 minutes until golden. Increase the heat, add the spinach, and cook, stirring, for another minute. Season with salt and pepper, and serve immediately.
