Ingredients

  • Mixed tomatoes of different colors - 52.9 oz
  • Vegetable Oil - 3 fl oz
  • Salt - 2 tablespoons
  • Sugar - 4 tablespoons
  • 9% Vinegar - 7 fl oz
  • Orange Bell Peppers - 3 pieces
  • Mild Chili Spice - to taste
  • Garlic - 1 head
  • Parsley - 1.8 oz

Prepare the necessary ingredients.

Wash the green tomatoes thoroughly under running water. Cut them into two or four pieces. Optionally, you can remove the stem.

Wash the parsley well, remove any excess, chop finely, and place it in a separate container.

Wash the red bell pepper well, remove the seeds and stems, cut into small cubes or strips, and add to the container with the chopped parsley.

Peel the garlic, wash it under running water, press it through a garlic press, and add it to the container with the chopped parsley and pepper.

Wash the chili pepper well, remove the seeds and stems, cut into small cubes or strips, and add to the container with the chopped vegetables.

Add the prepared vegetables to the container with the chopped green tomatoes and mix everything well.

Add 2 tablespoons of salt and 4 tablespoons of sugar to the tomatoes.

Place a plate on top of the tomatoes and set a weight on it. Leave the tomatoes to marinate overnight at room temperature.

In the morning, transfer the ready tomatoes along with the brine into clean, dry jars or a suitable container with a lid. Store in the refrigerator.
