Ingredients
- Wheat Flour - ¼ cup
- Salt - ¾ teaspoon
- Red Curry Powder - ½ teaspoon
- Cayenne Pepper - 0.1 teaspoon
- Scallops - 26.5 oz
- Butter - 6 tablespoons
- Fresh Mushrooms - 8.8 oz
- Onion - 8.5 oz
- Dry White Wine - 0.6 cup
- Cognac - 2 tablespoons
- Breadcrumbs - 3 tablespoons
- Grated Chocolate - 1.4 oz
- Meyer Lemon Juice - 1 tablespoon
Step by Step guide
Step 1
In a bowl, mix the flour, salt, curry powder, and cayenne pepper. Add the scallops and mix well.
Step 2
Melt 4 tablespoons of butter in a large skillet over medium heat. Add the scallops and sauté until golden brown, about 4 minutes, flipping once.
Step 3
Pour in the wine and cook for a while, stirring. Then slightly reduce the heat and let the sauce reduce by half. Remove from heat and stir in the cognac.

Preheat the grill in the oven.

Place the scallops in their shells and arrange them in a baking dish.

Mix the breadcrumbs, remaining softened butter, and Gruyère cheese. Spread on top of the scallops. Place under the grill and let brown. Drizzle with lemon juice and serve immediately.
