  • Grapefruits - 1 piece
  • Oranges - 1 piece
  • Fresh Mint - 1.8 oz
  • Freshly squeezed orange juice - 3 fl oz
  • Meyer Lemon Juice - 1 fl oz
  • Soy Sauce - 1 fl oz
  • Vegetable Oil - 1 fl oz
  • Grated Ginger Root - 0.7 oz
  • Mild Chili Spice - 1 piece
  • Malt Vinegar - 0 fl oz
  • Scallions - 0.9 oz
  • Ocean salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

First, finely grate the ginger and slice the chili pepper.

Step 2

In a large bowl, combine and thoroughly mix the orange juice, lemon juice, soy sauce, ginger, chili, vinegar, and oil.

Step 3

Slice the scallops across the grain. Arrange on a plate, alternating with peeled segments of grapefruit and orange.

Step 4

Sprinkle with finely chopped mint and green onion on top. Lightly season with salt and pepper.
