- Cucumbers - 3 pieces
- Tomatoes - 4 pieces
- Green Butter - 1.8 oz
- Turnips - 2 pieces
- Celery salt - 2 pieces
- Green peppercorns - 3 pieces
- Salt - to taste
Step by Step guide
Step 1
Place the scallop meat in boiling salted water, add pepper, celery, carrots, and cook for 10 minutes.
Step 2
Slice the cooked and cooled scallop meat across the grain into pieces and arrange on a plate. Next to the scallops, place the garnish: cucumbers and tomatoes, sliced into rounds. Garnish with lettuce leaves.
Step 3
You can add 3–4 teaspoons of prepared horseradish.
